The Essential Baking Company To Open in Downtown Bellevue
The Essential Baking Company has put up “Coming Soon!” signs in the window, revealing that they will soon be opening inside University Bookstore in Downtown Bellevue. Their website states that the Bellevue location will open this summer.
The company was founded in 1994, and currently has 3 Seattle locations. The cafés serve breads, pastries, sandwiches, coffee, and more. The cafés promise fresh, organic, and natural ingredients.

This is awesome! I live in Avalon Towers and this will be a welcome addition to grab a sandwich or bakery item that is NOT Starbucks (which I also enjoy).

I was just at Zeek’s on Wednesday and can’t recall any space either. Maybe I’ll walk over for the heck of it and find the signs.

I drove past there yesterday, and the bakery looks like it will be inside the bookstore, rather than have its own entrance door.
